Mango Lime Fish Fillets

 Some times an "oops" turns out to be really delicious.  I asked Roy to bake the fish I had in the fridge while I was on my way home so that we could eat at a reasonable hour... 9pm.  


He baked some fish -- just not the fish that I planned....


 This was the fish originally planned, Almond covered fillets...  Never fear though, I am adaptable.  And I will not be deterred by and oops, no matter how late in the evening!  The oven was still hot when I arrived home, and I popped in the fillets and baked them up.



Then I thought about how to make the plain fillets a bit more appealing...



So I whipped up some mango, lime, onion and jalapeno sauce in the food processor and called it amazing.

This sauce was as follows:
1 mango
1/4 onion
1/2 jalapeno
1 lime juiced
1 tbsp Extra Virgin Olive Oil

Place ingredients in food processor and pulse until it looks like a mostly smooth sauce.



I served the fish and sauce over sauteed garlic Zucchini noodles.  I do believe it was a delicious mix-up.  And there were leftovers for lunch for Thursday!
